Tomato Sugo for Everything

When we don’t know what’s for dinner, it’s this. One pot, twenty minutes, and the rest of the week is saved.

Ingredients

  • 1 tin of chopped tomatoes

  • 1 onion

  • 2 cloves of garlic

  • 2 tbsp olive oil

  • 1 tsp sugar

  • salt, pepper and fresh basil

Method

  1. Finely chop the onion and garlic and soften them in the oil.

  2. Add the tomatoes, season with sugar and salt, bring to a boil.

  3. Simmer gently for twenty minutes until the sauce thickens.

  4. Off the heat, stir in the basil.

Leftovers go in a jar and keep three days. Or one, if there’s bread nearby.
